Recipe 1: Lemon Grilled Chicken Skewers

Ingredients:

500g boneless, skinless chicken breasts, cut into cubes

2 tablespoons or 30mL Cobram Estate Lemon Flavored Extra Virgin Olive Oil

1 teaspoon or 2 g dried oregano

Salt and pepper to taste

Bamboo skewers, soaked in water for 30 minutes

Instructions:

  1. In a bowl, combine the Artisan Collection Lemon Flavored Extra Virgin Olive Oil, dried oregano, salt, and pepper. Add the chicken cubes and toss until evenly coated. Marinate in the refrigerator for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked bamboo skewers.
  3. Grill the skewers for 6-8 minutes per side, or until the chicken is cooked through and has grill marks.
  4. Garnish the skewers with fresh rosemary (optional).

Recipe 2: Black Truffle Roasted Potatoes

These crispy golden potatoes are elevated with the luxurious essence of black truffles, creating a savory side dish that's sure to impress.

Ingredients:

500g baby potatoes, halved

2 tablespoons or 30mL Cobram Estate Truffle Flavored Extra Virgin Olive Oil

1 teaspoon or 2 g dried rosemary

Salt and pepper to taste

Instructions:

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved baby potatoes with the Truffle Flavored Extra Virgin Olive Oil, dried rosemary, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender.

Recipe 3: Spiced Chocolate Olive Oil Mousse

Enjoy this spicy twist on the classic chocolate mousse, made with Cobram Estate Chili Flavored Extra Virgin Olive Oil! Each serving contains approximately 25 grams of dark chocolate. The low FODMAP recommended amount of chocolate per serving is 30 grams or less.

Ingredients:

100g dark chocolate chopped

2 tablespoons or 30mL Cobram Estate Chili Flavored Extra Virgin Olive Oil

2 tablespoons or 40 g maple syrup

½ teaspoon or 2.1 g vanilla extract

Pinch of cinnamon

½ cup or 120 g lactose-free whipping cream

Instructions:

  1. In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring occasionally until smooth.
  2. Once melted, remove from heat and stir in the Cobram Estate Chili Flavored Extra Virgin Olive Oil, maple syrup, vanilla extract, and cinnamon until well combined. Allow the mixture to cool slightly.
  3. In a separate bowl, whip the lactose-free whipping cream until it forms stiff peaks.
  4. Gently fold the whipped cream into the chocolate mixture until well combined and smooth.
  5. Divide the mousse into six serving glasses or bowls.
  6. Refrigerate for at least 2 hours, or until set.
  7. Before serving, garnish with a sprinkle of cinnamon or a dollop of lactose-free whipped cream, if desired.
