Amy Laura is the author of Calm Tummy Happy Heart cookbook. Featured are a wide variety of robust, savory and sweet American Southwest inspired recipes. The cookbook is also gluten and dairy-free, bringing the joy of eating southwestern foods to those suffering from IBS, and other allergies or intolerances.
Tell us a little bit about yourself and who inspired your love of cooking.
The first book I checked out of a library was a children’s cookbook. Both of my grandmothers were skilled home cooks who invited me into their kitchens to watch and learn. My parents are also excellent home cooks, and in my early teens they enrolled me in cooking classes. I’ve continued this learning process for many years now.
What inspired you to write the Calm Tummy Happy Heart cookbook?
I suffered from painful and misdiagnosed IBS symptoms for over 30 years. Within three days of eating strictly low FODMAP, I felt relief for the first time in three decades.
Living in the Southwestern United States, I crave the flavorful, bold cuisine of my region. I did not want to give up these familiar, delicious dishes, so I wrote the cookbook to convert authentic, regional recipes into Low FODMAP for all to enjoy. I mean, who doesn’t love a good taco plate?!
The intention is to offer the home cook confidence in making certified dishes for a calm tummy, and hope and empowerment that lifts their hearts with happiness, hence the book’s title.

80+ American Southwest recipes that are appropriate for the beginning, Elimination Phase of the low FODMAP diet.
