Mixed Berry Slice with GoodMix Blend 11

⅔ cup GoodMix Blend 11, soaked in ⅓ water overnight

100 g 3.5 oz

¼ cup rolled oats

26 g 0.9 oz

2½  Tbsp coconut oil, melted

40 g 1.4 oz

4 plain sweet biscuits

36 g 1.3 oz

1 cup macadamia nuts, soaked in boiling water

125 g 4.4 oz

Low FODMAP berries (e.g. strawberries/blueberries/raspberries)

250 g 8.8 oz

Coconut yoghurt

170 g 6 oz

2½  Tbsp corn flour

25 g 0.9 oz

1 tsp vanilla essence

5 g 0.2 oz

¼ cup maple syrup

62.5 g 2.2 oz


  1. Prepare GoodMix Blend 11 by adding 
    ⅓ cup water to  cup raw mix. Stir and refrigerate overnight. 

  2. Prepare macadamia nuts by soaking in boiling water for at least 1 hour to soften. Drain before use. 

  3. In a food processor, add prepared GoodMix Blend 11, rolled oats, coconut oil and plain sweet biscuits. Process until mixture is resembles sticky breadcrumbs. Spread mixture into a lined 20x30cm slice tray then set aside in fridge. 

  4. Add all remaining ingredients to a food processor. Process until mixture is smooth and creamy. 

  5. Pour mixed berry filling over chilled slice base. Freeze for at least 2 hours before serving. 


This slice makes a delicious vegan, dairy-free dessert alternative - remove from freezer for 10 minutes before serving to allow the slice to soften slightly.
